I would like to see some clear wiki post on the differences between the different stealth proxies like vless, vmess, trojan and hysteria2. Which offer more performance and which offer decent performance but more security. This would be helpful to new users and the community in general. It also would help to know which of these has been fully audited also.

We can write something like that for sure.
I would say that the protocols are kinda fine in terms of the security and bigger problem could be 3rd party clients that are usually not well maintanted.
