I am a complete noob when it comes to vpns and stealth proxies, is there any additional setup needed for v2rayN to make it work with proxies better or have better obfuscation? Or it is due to connecting from a heavily censored and dpi heavy location?

No additional tweaking is required. This is normal and you can ignore such error messages in logs. Such errors are shown in case of network issues on your side (ISP), our side (servers) or both.
I couldn't get TUN mode to work. Only system proxies work normally. No matter how much I tried to configure it, google it, and ask AI, I still couldn't get it to work. Maybe there are ways to fix this? Windows 10 OS.
This is common issue with Windows 10 and proxy clients from our experience. The TUN implementation in proxy clients is quite buggy. The easiest way is to switch to another client which is Throne. Links are available on proxy generator page.
